I really think this is a Persona Management issue where some portion of the user’s profile that is necessary for the point and print driver is not getting saved to the share on logoff I have a ticket with VMware, hopefully they can shed some light on this.

Go into the master image that the virtual desktop pool is built on and map the printer share which puts the “Microsoft enhanced Point and Print compatibility driver” inside of “Print Management”.
